Beer Batter Crepes I

Crepes made with milk and beer. If the crepes are thicker than you'd like, thin the batter with additional milk, whisking it in gently."
For a fruity flavor add Champagne instead of beer
12 crepes
PREP TIME 1 Hr
COOK TIME 3 Min
READY IN 1 Hr 15 Min
INGREDIENTS
3 eggs, lightly beaten
1 cup milk
1 cup beer
1 3/4 cups all-purpose flour
1 pinch salt
2 tablespoons vegetable oil
2 tablespoons butter
DIRECTIONS
In a large bowl, whisk together eggs, milk and beer. Gradually whisk in flour. Add the salt and oil, then whisk the batter vigorously for 3 to 5 minutes, so all is thoroughly incorporated. Let the batter sit for 1 hour.
Heat a 10 inch non-stick skillet over medium heat. Brush it with butter, and when it's hot but not smoking, pour a scant 1/3 cup of batter into the center of the skillet, and rotate it so the batter covers the bottom of the pan in a thin layer, pouring out any excess batter. Cook the crepe until it is just golden on one side, 1 to 2 minutes, turn it and cook until it is golden on the other side, about 30 seconds. Transfer to a plate, and keep warm by covering with aluminum foil. Continue until all of the batter is used.

OH MY LORD...now this just put 5 lbs on the hips...and all I'm doing is reading the recipe!!! I still have to get into a "semi-formal" for the

Now ya don't hafta follow the resappy word for word or ingrediant for ingrediant. Use egg beaters to cut the cholesterol, skim milk, and light beer (Or champagne). No it won't tastse as elegant,but when you are a sub sailor on a 3 month northern run and the good tastin stuff ran out, the cooks used thier imaginations to whip up something eatable and believe it or not, you got used to it!!!

will certainly try my hand at these next week   The Bourbon BBQ sauce is getting made again this week end only for a pot luck this time mixed into a crock pot full of little Smokies (maybe a bowl full or two with some good beans as well)

and another mystery

Why does everything that seems to taste so good have a touch of booze in it?

Why is it that everything that tastes good isn't good for you? The colestrol is too high of the fats, sodium, etc.
You can fast, exercise watch what you eat for months and loose maybe 15 pounds. Eat a 160z T-bone, baked potato, tossed salad fried okra and a bowl of ice cream for dessert and your pounds are back by morning. It ain't right, I tell ya. Not fair! A bunch of BS. Dog-gone it, I'm headed to the Texas Roadhouse. See ya!

NOPE...will do the "fat" way...this will be my reward...I've been a good girl all week...and I will do with champagne...nothing like having a champagne taste on a beer budget!!!

...FRIED OKRA...Bear do you mix cheese in with your batter???

Fried Okra in a tossed salad is great! Toss in some bacon bits, croutons with a hint of garlic and the knats and mosquitoed won't bother you for a week. YUM-Yum

Try using finely shredded extra sharp (if you can find it) when you add it to the batter. It melts like "budder"!!!
