Plank grilling is fun!
When I first tasted fish grilled on a plank, I was delighted with the wonderful flavor the wood gave the fish. Since then I've enjoyed plank grilling all sorts of foods.
To try your hand at plank grilling:
I recommend starting with the untreated wood planks you'll find at cooking.com. (Our recipes use cedar planks, but you'll also find alder and maple.)
Soak the planks for 4 hours or overnight to keep them from burning as you cook.
Check often during cooking to make sure the planks are not on fire. Keep a spray bottle of water handy.
Here's to great wood-planked meals!
Prep Time: 10 min.
Total Time: 4 hours 35 min. (incl. soaking of plank)
Makes: 8 servings.
1 untreated cedar plank (14x7x1 inch)
1/2 cup KRAFT Sun-Dried Tomato Dressing
1/4 cup finely chopped fresh parsley
1/4 cup finely chopped sun-dried tomatoes
1 salmon fillet (2 lb.), 1 inch thick
IMMERSE plank in water, placing a weight on top of plank to keep it submerged. Soak at least 4 hours or overnight.
HEAT grill to medium heat. Mix dressing, parsley and tomatoes; set aside.
BRUSH top of cedar plank with 1 Tbsp. oil; top with fish. Place on grill; cover grill with lid.
GRILL 10 min. Brush with dressing mixture; continue grilling 10 min. or until fish flakes easily with fork

Yes, the untreated planks would be much healthier for you especially if you use wood that was treated with arsnic(sp). Another wood to steer clear from would be hemlock. |

At least they did a couple of years ago when I got mine. Look for them where they have the barbeque supplies. I use a Weber gas grill, and found that making a little foil tent to put over the filet minimized drying it out, whilst cooking.

You can go to a BBQ supply store and spend quite a bit of money for very little wood, or you can go to a specialty hardwoods lumberyard, and buy the same stuff by the board foot. It will be a lot cheaper. A LOT cheaper! |
